Restoring Transaction Logs / differential Backups later

Hi, I am trying to do the below for my SharePoint 2013 environment which is using SQL Server 2014.

This is for the SharePoint's Content Databases....

What I am planning to do here is to make a 200 GB backup of a few content Databases.

This is what I am thinking:

Since, this complete Backup and Restore cannot happen in just a 1 day down-time, I am planning to do a Full Backup first (after changing to Recovery Model to Full), I will restore it to a New SP 2013 environment - then keep making any changes...in them...

At the same time, we will keep taking Differential backups every day on the source SP 2013 environment - then, in the subsequent weekend, instead of doing a full restore - I will just restore all the differential backups alone.

The challenge I saw is that - the differential backups are restorable only when the DB is in "Recovery" mode and we are unable to work on this while differential backups are yet to be restored.

Is this possible without having the destination DB in the Recovery Mode?
